Breakfast Oatmeal
Ingredients:
- 2 cups soy milk or water
- 1/4 tsp salt
- 1 1/2 cups rolled oats
- 1.4 cup raisins
- 1/4 cup dried cranberries
- 1/2 tsp ground cinnamon or vanilla (optional)
- brown sugar to taste
Directions:
- In a medium saucepan, bring soy milk or water and salt to a boil.
- Stir in rolled oats, raisins, cranberries and cinnamon (if using).
- Reduce heat and simmer, uncovered asd stirring occasionally for 3 minutes for quick-cooking or 10 minutes for old-fashioned rolled oats. Stir in vanilla (if using).
- Top each serving with a sprinkle of brown sugar and serve with additional soy milk or milk. Makes 2 to 3 servings.
